The traditional Bilona method requires milk with the right fat structure, protein composition, and culturing behaviour. Native A2 milk delivers all three. The process works as follows:

● Fresh A2 milk is boiled and cooled.

● It is cultured with a live curd starter (dahi) to ferment overnight.

● The curd is hand-churned using a wooden churner (bilona) to separate butter (makkhan).

● The makkhan is slow-cooked over a low flame to produce clarified ghee.
